Braised Chicken Thighs with Portobello Mushrooms and Goats Cheese
For the ingredients you will need
Some extra virgin olive oil
Cracked black pepper
Some fresh garlic
And some salt and pepper for seasoning
Mix all of the dry ingredients in a small bowl and then heat the oil in a large skillet over a medium heat. Coat the chicken thighs with the dry mixture and then place skin side down in the heated pan. Cook the chicken thighs for around 4 to 5 minutes, until they are nicely browned. Turn over and repeat on the other side. When cooked emove the chicken from the pan and set aside.
Now add the butter and mushrooms to the pan and saute the mushrooms for around 4 to 5 minutes. And while the mushrooms are cooking, stir them occasionally until they are browned and very little moisture remains in the pan. Now add the shallot and the garlic and saute for about 3 to 4 minutes.
Now add the chicken broth and rosemary and bring to a boil. Reduce to a simmer and add the seared chicken thighs back to the pan and reduce to a simmer. Cook the chicken for 25-30 minutes, then turn it over and continue cooking for another 30 minutes or until the meat is very tender.
Remove the chicken thighs from the pan and keep warm. Break up the goats cheese into 3 or 4 chunks and add to the warm sauce. Stir this through until completely melted and season with salt and pepper. Now you can serve the chicken thighs topped with creamy mushroom sauce along with mashed potatoes, garlic mashed cauliflower or whatever happens to be your favorite side dish.
