Chicken changezi is a very popular chicken recipe of North India full of mughlai aroma and rich, spicy gravy served hot with kulcha or butter naan. It comes under the list of chicken Mughlai recipes

1kg chicken wash properly and drain the water completely
3large sliced onions
3large tomato puree
1.5tbsp coriander powder
1tsp garam masala powder
1tbsp Kashmiri red chilli powder
1tsp chat masala
6tbsp cream(amul)
20 cashews
2tbsp dried fenugreek leaves
1tbsp ginger garlic paste
1mug milk
Salt to taste
7-8slit green chillies
Fresh coriander

After the marination is done keep the marinated chicken in a wok on low flame covered till the chicken loses its water completely then remove the lid stir on high flame and burn the water completely once done switch off the flame.
In another wok heat oil add the sliced onions keep the flame on high when the onions turn translucent add the cashews stir to avoid burning of the onions fry till it turns dark pink in colour.
Once done switch off the flame let the onions and cashew cool down then grind it to a fine paste.
In the same oil add cumin seeds when it starts to crackle add the ginger garlic paste saute for few secs keep it on medium flame add the tomato puree.
Saute for 2-3mins then add all the dry spices
Mix well so that the masala blends well with the puree.
cover the lid keep the flame on minimum and cook till the oil floats on the surface of the masala.

Now add the onion and cashew paste milk and cream mix well cover the wok and cook till the masala leaves oil.
approx 10 mins
Stir in between as the cashew nut paste sticks to the wok
When the masala is cooked add all the chicken pieces.
Mix well now add the remaining water of the jar add kasuri methi mix well.
Kasuri methi should be added in the last, as it loses it’s flavour and smell when added at the start of the recipe
Add 1/2glass of water for thinner gravy mix well ,add pinch of colour optional
Mix well.
cook for more ,10 mins
When the chicken is done add fresh coriander sprinkle 1tsp of chat masala
Mix well and switch off the flame
Now give the dhungaar effect
Serve hot
