Chicken Chaap or chicken Chaanp is an aromatic rich Mughlai dish, Popular in Kolkata usually serves with Biriyani or sometimes with Roti ( a type of Indian Bread).
02 no’s chicken thighs
04 tbs onion paste
02 tbs ginger garlic paste
04 tbs yoghurt
02 tbs cashew paste
02 tbs chilly powder
02 tbs chhattu ( Bengal gram flour)
Few drops rose water
Few drops kewra water
Salt to taste
04 tbs ghee
Pinch of saffron colour
¼ tsp sugar
1 ½ chap masala
First marinate the chicken with onion paste, ginger garlic paste, yogurt, chilly powder, chhattu, rose water, kewra water, chap masala and 01 tsp oil. Keep 01 to 02 hours.
After 02 hours heat the pan put ghee and fry the chicken thighs only,keep separated the marinated gravy.fry the chicken both sides of chicken like golden brown then pull out from the pan.
Same pan add sugar and put the marinated left over gravy cook for 02 minutes and then add chicken and cook in medium low flame until its become tender, then add saffron colour , chew paste ,chap masala, rose water, kewra water and salt and cook again 03 minutes or until the oil comes out from gravy. Then its ready to serve.
