Szechuan Chicken made as a curry, by tossing Chicken fried nuggets into a sauce that contains many vegetables and good healthy chicken stock as one of the best Chicken Curry recipes.

Chicken Szechuan Stir Fry Sauce


For the Chicken Brine

02 Cups Water
01 tsp Sugar
1/4 tsp Salt
250 gms Chicken (Boneless Breast)


For the Chicken Marinate

01 Egg
01 tsp Vinegar
1/4 tsp Dark Soy Sauce
1/4 tsp Ginger Garlic Paste
1/6 tsp White Pepper Powder
1/4 tsp MSG / Ajinomoto
1/4 tsp Salt
02 tbl Spoon Corn Flour


For the Chicken Schezwan Sauce Stir Fry

02 Onions (Medium Size)
01 Mushroom
1/2 Red Bell Pepper
1/2 Yellow Bell Pepper
1/2 Green Bell Pepper
1/2 Carrot
02 Spring Onions (with their Green Stalks)
02 Green Chillies
1/4 Lemon Leaf
05 Garlic Cloves (finely chopped)
1/2 inch Ginger (finely chopped)
01 Cup All Purpose Flour
350 ml Vegetable Oil (deep frying Chicken)
01 Cup Chicken Stock
01 tsp Sugar
01 tsp Ajinomoto / MSG
1/4 tsp White Pepper Powder
1/4 tsp Salt
1/2 tbl Spoon Dark Soy Sauce
1/2 tbl Spoon Vinegar
04 tbl Spoons Chings Schezwan Sauce
01 tsp Corn Flour (in 1/4 Cup of Water)


Szechuan / Schezwan Chicken Stir Fry Sauce

Cooking Instructions

1) Add the washed boneless breast pieces of Chicken to the Brine (Water+Sugar+Salt mixture) and keep aside for 15 minutes.

2) After 15 minutes discard the water and secure the Chicken by passing it through a sieve.

3) Marinate the Szechuan Chicken by using the ingredients mentioned above and keep aside for atleast 30 minutes.

4) Deep fry the chicken from Step 3 and keep aside we will use this towards the end in the Schezwan Sauce.

5) To a wok add Oil borrowed from the same vessel in which you deep fried the Chicken, and cooking at a high flame add ginger garlic, and the rest of the vegetables starting with diced onions.

6) Add the Chicken Stock and simmer as you continue to add the spices, dark soy sauce, white vinegar and the most important Ching’s Schezwan Stir Fry sauce.

7) Finally add the corn flour slurry (corn flour 1 tsp mixed in 1/4 cup of water) after you put off the flame by stirring your Schezwan sauce continuously as you pour the corn flour slurry to avoid lumps, and drop the fried chicken nuggets from step 4.

8) Serve hot Szechuan Chicken Stir Fry with steam or fried rice, enjoy with family and friends 🙂
